White wine is a style built on minimal skin contact: grapes are pressed and the clear juice is fermented without (or with very little) time on the skins, so colour stays pale and tannins remain low. That’s why white can be made from green/yellow grapes (Chardonnay, Sauvignon Blanc, Riesling) and even red-skinned grapes (Pinot Noir for blanc de noirs) so long as the skins don’t tint the juice.
